Susan Hansel’s Blueberry Buckle

Topping:

½ cup sugar

1/3 cup flour

1 teaspoon cinnamon

¼ cup soft butter


Cake:

¾ cup sugar

¼ cup soft butter

1 egg

½ cup milk

2 cups flour

2 teaspoons baking powder

½ teaspoon salt

2 cups fresh or frozen blueberries


Directions:

Preheat oven to 375F, and butter a 8” or 9” square pan, or equivalent.

For the topping: Combine all ingredients in a small bowl and mix well with a fork until crumbly.

For the cake: Cream the sugar and the butter. Stir in the egg and milk. Add the flour, baking powder, and salt, and combine well with a spoon. Gently stir in the blueberries. Scrape cake batter into the buttered pan. With your fingers, crumble the topping on top of the batter. Place in oven and bake for about 40 minutes, until cake tests done with a toothpick.
